- Heat olive oil in a skillet over medium heat.
- Add chopped spinach and sauté until wilted. Season with salt and pepper.
- Remove spinach from skillet and set aside.
- Place a tortilla in the skillet, add half of the feta cheese, then the sautéed spinach, and top with the remaining feta.
- Place another tortilla on top and cook until golden brown, about 3-4 minutes per side.
- Remove from heat, slice into wedges, and serve warm.
Notes
Serve warm with salsa, guacamole, or sour cream for dipping. They can be stored in an airtight container in the fridge for 2-3 days.
