Ingredients
  

For the dough
  • 4 cups all-purpose flour Can substitute with bread flour if needed
  • 1 cup sourdough starter Must be bubbly and active
  • 1 tablespoon salt
  • 1.5 cups water Warm water to activate the starter
For the boiling
  • 1 tablespoon honey Optional, for glossy crust

Method
 

Making the Dough
  1. In a large bowl, mix together the sourdough starter, flour, salt, and warm water until you achieve a shaggy dough.
  2. Let the dough rest for a solid overnight rise, at least 8-12 hours.
Shaping and Boiling the Bagels
  1. The next morning, shape the dough into small rounds and poke a hole in the center to form a bagel.
  2. Boil the bagels in simmering water for 1-2 minutes. Optionally, add honey or baking soda to the water for a glossy finish.
Baking
  1. Place the boiled bagels on a baking sheet and bake in a preheated oven at 425°F (220°C) for about 20 minutes or until golden brown.

Notes

For variety, you can add toppings like seeds or flavorings (e.g., garlic, onion) before baking. Store leftovers in the freezer to maintain freshness.
