  • 1 kg Pork belly or ribs, beef shank, chicken thighs, shrimp, or fish Choose your preferred protein.
  • 1 cup Tamarind pods or paste This provides the signature sour flavor.
  • 1 cup Radish Also known as daikon.
  • 1 cup Eggplant Sliced.
  • 1 cup Okra Trimmed.
  • 1 cup String beans Cut into 2-inch pieces.
  • 2 pieces Tomatoes Quartered.
  • 1 cup Onion Chopped.
  • 2 pieces Green chili Whole.
  • 1 tbsp Fish sauce For seasoning.
  • to taste Salt and pepper For additional seasoning.

Method
 

Preparation
  1. In a large pot, add the chosen protein and cover with water.
  2. Add chopped onions and quartered tomatoes.
  3. Bring to a boil and simmer until the meat is tender.
Cooking
  1. Add the tougher vegetables first such as radish, eggplant, and okra.
  2. After simmering for about 15 minutes, add the string beans and green chili.
  3. Incorporate the tamarind pods or paste for sourness.
  4. Taste and adjust seasoning with fish sauce, salt, and pepper.
Final Touch
  1. Add leafy greens like spinach or kangkong and simmer for an additional 5 minutes.
  2. Serve hot with a side of steamed rice.

Notes

For a vegetarian option, skip the meat and use mushrooms or tofu. Store leftovers in the refrigerator for up to three days. The flavors improve after a night in the fridge.
