Preparation
- Tear the lion's mane mushrooms into thick, bite-sized chunks with your hands.
- Wash them quickly if dirty, then pat them dry.
Cooking
- Heat a skillet over medium-high heat and add olive oil or melt butter.
- Once hot, add the mushroom chunks to the skillet, making sure not to crowd them.
- Cook for 2-3 minutes without stirring to allow one side to brown.
- Flip the mushrooms, season with salt and pepper, and continue cooking until both sides are golden and crispy, about another 4-5 minutes.
- If desired, add minced garlic in the last minute of cooking and squeeze fresh lemon juice over the top before serving.
Notes
Best served fresh, but can be stored for up to 2 days cooked in a sealed container. Freeze sautéed mushrooms for up to a month.
