  • 1 pound ground beef (or sausage, turkey, or beans)
  • 1 block (16 oz) Velveeta cheese, cubed
  • 1 can (10 oz) Rotel tomatoes Choose mild or original heat level

Method
 

Preparation
  1. Brown the ground beef in a skillet, breaking it up as you go until crumbly.
  2. Drain off any excess grease.
  3. Add the cubed Velveeta cheese and the Rotel tomatoes (including the juice) to the skillet.
  4. Cook over medium-low heat, stirring gently until everything is melted and combined.
  5. Optional: Add taco seasoning or diced jalapeƱos for extra flavor.
Serving
  1. Serve warm with tortilla chips, bread, or vegetables.

Notes

This dip can be made ahead of time and warmed up. It can also be kept warm in a slow cooker. Variations include using different meats, cheese types, and additional spices.
