Preparation and Cooking
  1. Preheat your oven to 400°F (200°C).
  2. In a large baking dish, arrange the chicken thighs at the center.
  3. Surround the chicken with the sliced red and yellow bell peppers, zucchini, red onion, cherry tomatoes, Kalamata olives, and artichoke hearts.
  4. In a small bowl, mix the minced garlic, lemon juice, lemon zest, dried oregano, thyme, rosemary, paprika, olive oil, salt, and black pepper.
  5. Drizzle this mixture over the chicken and vegetables, ensuring everything is well coated.
  6. Bake in the preheated oven for about 40-45 minutes, or until the chicken is cooked through and the skin is golden brown.
  7. Once done, sprinkle with fresh parsley for garnish before serving.

Notes

Tips: Marinate the chicken for extra flavor, add other vegetables, and adjust spices to taste. For a lighter version, substitute skinless chicken breasts or thighs.
