  • 4 pieces chicken breasts Boneless and skinless
  • 1 cup artichoke hearts Canned or frozen, drained
  • 1/2 cup sun-dried tomatoes Packed in oil, drained
  • 1 cup low-sodium chicken broth To avoid excessive salt
  • 2 tablespoons olive oil Extra virgin recommended
  • 1 tablespoon fresh lemon juice For brightness at the end
  • 1 teaspoon dried oregano
  • 1 teaspoon salt Adjust based on broth used
  • 1 teaspoon pepper Freshly ground
  • 1/4 cup chopped fresh parsley Optional for garnish

Method
 

Preparation
  1. Place the chicken breasts at the bottom of the slow cooker.
  2. Add the artichoke hearts and sun-dried tomatoes on top of the chicken.
  3. Pour the chicken broth over the ingredients.
  4. Drizzle with olive oil and lemon juice.
  5. Sprinkle oregano, salt, and pepper over everything.
Cooking
  1. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  2. Check that the chicken is cooked through and shred it gently if desired.
  3. Garnish with chopped parsley before serving.

Notes

Serve with fresh green salad, couscous, or crusty bread. Leftovers improve in flavor overnight.
