Preparation
- Place the chicken breasts at the bottom of the slow cooker.
- Add the artichoke hearts and sun-dried tomatoes on top of the chicken.
- Pour the chicken broth over the ingredients.
- Drizzle with olive oil and lemon juice.
- Sprinkle oregano, salt, and pepper over everything.
Cooking
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Check that the chicken is cooked through and shred it gently if desired.
- Garnish with chopped parsley before serving.
Notes
Serve with fresh green salad, couscous, or crusty bread. Leftovers improve in flavor overnight.
