Preparation
- Rinse the rice a couple of times until the water runs clear.
- Heat olive oil in a saucepan over medium heat.
- Sauté the chopped onion and minced garlic until fragrant, being careful not to burn them.
- Add the rinsed rice to the saucepan and toast for about a minute.
- Pour in the chicken or vegetable broth and add a pinch of salt, along with turmeric or saffron if desired.
- Optionally, add frozen peas.
- Bring the mixture to a boil, then reduce to a simmer and cover with a lid.
- Allow to simmer on low heat for 15 minutes without lifting the lid.
- After 15 minutes, fluff the rice with a fork and serve.
Notes
Mediterranean rice keeps well in the fridge for about three days. Reheat with a splash of broth to prevent drying out. Consider stirring in fresh herbs right before serving for added vibrancy.
