Ingredients
  

Main Ingredients
  • 1 cup long-grain white rice Can substitute with basmati or jasmine rice.
  • 2 cups chicken or vegetable broth Do not use water.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil For sautéing.
  • 1 cup frozen peas Optional.
  • 1 big pinch salt
  • 1 teeny pinch turmeric or saffron Optional for color and flavor.

Method
 

Preparation
  1. Rinse the rice a couple of times until the water runs clear.
  2. Heat olive oil in a saucepan over medium heat.
  3. Sauté the chopped onion and minced garlic until fragrant, being careful not to burn them.
  4. Add the rinsed rice to the saucepan and toast for about a minute.
  5. Pour in the chicken or vegetable broth and add a pinch of salt, along with turmeric or saffron if desired.
  6. Optionally, add frozen peas.
  7. Bring the mixture to a boil, then reduce to a simmer and cover with a lid.
  8. Allow to simmer on low heat for 15 minutes without lifting the lid.
  9. After 15 minutes, fluff the rice with a fork and serve.

Notes

Mediterranean rice keeps well in the fridge for about three days. Reheat with a splash of broth to prevent drying out. Consider stirring in fresh herbs right before serving for added vibrancy.
