Ingredients
  

Main Ingredients
  • 1 lb Ground beef Lean ground beef is preferred, but any ground beef will work if drained.
  • 1 medium Onion Any type of onion (yellow, white) can be used.
  • 2 cloves Garlic Minced.
  • 2 cups Tomatoes Fresh or canned.
  • 1 medium Bell pepper Red bell pepper is preferred for sweetness.
  • 0.5 cup Kalamata olives Black olives can be substituted.
  • 1 tbsp Cumin
  • 1 tbsp Oregano
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 tsp Paprika
  • 2 tbsp Olive oil For cooking.
  • 0.5 cup Feta cheese Crumbled, for topping.
Optional Vegetables
  • 1 cup Spinach For added greens, add at the end until wilted.
  • 0.5 cup Parsley Chopped, for garnish.
  • 1 medium Carrot Chopped, optional.

Method
 

Cooking the Beef
  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onions and bell peppers. Sauté until softened, about 2-3 minutes.
  3. Add minced garlic and cook for 1 minute until fragrant.
  4. Add the ground beef and break it up as it browns. Cook thoroughly.
  5. Sprinkle in the cumin, oregano, salt, black pepper, and paprika. Stir to combine.
Finishing Touches
  1. Add the tomatoes and simmer until the sauce thickens slightly.
  2. Stir in the olives just before serving to warm them.
  3. Top with crumbled feta cheese.
Serving
  1. Serve over rice, couscous, or arugula and enjoy with pita.

Notes

Customize with whatever vegetables you have on hand. Can be made ahead and stored in the fridge for 3 days.
