Preparation
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and add the sliced bell peppers. Sauté until softened.
- Add the chunky tomato sauce to the skillet and mix well.
Baking
- Make four wells in the sauce mixture and crack an egg into each well.
- Top each egg with crumbled feta cheese.
- Bake in the preheated oven for about 15-20 minutes, or until the egg whites are set but yolks are still runny.
- Remove from the oven and let cool slightly before serving.
Notes
For a unique twist, serve with warm pita or a fresh baguette. You can also pair it with a simple side salad to balance the meal. If looking to make this vegan, consider using dairy-free cheese and chickpea flour instead.
