  • 1 lb Ground beef Choose 80/20 for best flavor
  • 2 pieces Eggs
  • 1/2 cup Almond flour Replaces breadcrumbs
  • 1/2 cup Parmesan cheese Can substitute with cheddar
  • 1/2 cup Ketchup with no sugar added Plus more for topping
  • 1 tbsp Worcestershire sauce
  • 1/2 cup Minced onion Or onion powder to taste
  • 1 tsp Garlic powder
  • 1 tsp Salt
  • 1/2 tsp Black pepper
Optional Substitutes
  • 1 cup Crushed pork rinds Alternative for almond flour
  • 1 tbsp Ground flaxseed Alternative for almond flour
  • 1 lb Ground turkey If you prefer turkey, mix in olive oil

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine ground beef, eggs, almond flour, minced onion, ketchup, Worcestershire sauce, garlic powder, salt, and pepper.
  3. Mix by hand until well combined, then shape into a loaf.
  4. Place the meatloaf on a parchment-lined baking sheet or in a loaf pan.
  5. Spread additional ketchup over the top.
Cooking
  1. Bake in the preheated oven for 35-40 minutes, depending on thickness.
  2. Let the meatloaf rest for 5 minutes before slicing.

Notes

Let the mixture sit for a few minutes after mixing for better consistency. Use grated onion for picky eaters. Allow rest time before slicing to maintain juiciness. Overhandling can lead to a dry meatloaf.
