  • 2 pounds chicken breasts, thin cut Frozen or fresh, for easy preparation.
  • 1 cup salsa For flavoring the chicken.
  • 1 can diced tomatoes Adds moisture and flavor.
  • 1 cup vegetables (cauliflower, eggplant, mushrooms) Low-carb options for variety.
  • 1 tablespoon spices (cumin, paprika) Optional for added flavor.
Optional Add-ins
  • 1 cup broth To keep meats moist.
  • 2 cups spiralized zucchini For a low-carb noodle alternative.

Method
 

Preparation
  1. Place frozen or fresh chicken breasts in the crockpot.
  2. Add salsa and diced tomatoes on top of the chicken.
  3. Mix in chosen low-carb vegetables and spices.
Cooking
  1. Cover and cook on low for 6 hours.
  2. If using, add a splash of broth halfway through to maintain moisture.
Serving
  1. Serve over spiralized zucchini or with desired sides.
  2. Garnish with Greek yogurt or green onions if desired.

Notes
