Ingredients
  

Main Ingredients
  • 1 lb lean ground turkey or chicken Can substitute with very lean beef or finely diced tofu.
  • 1 can black beans, drained and rinsed Can swap with kidney or pinto beans.
  • 1 can corn, drained Fresh or frozen corn can be used.
  • 1 can diced tomatoes Fire-roasted tomatoes recommended for more flavor.
  • 1 small onion, chopped Chop finely for better integration.
  • 1-2 tbsp taco seasoning Add more for a spicier version.
  • 4 cups low sodium chicken broth Use vegetable broth for a vegetarian version.
Optional Add-ins
  • 1 handful baby spinach Adds extra greens.
  • 1 dash lime juice Enhances flavor.
  • to taste chopped bell pepper Optional for added flavor.

Method
 

Cooking
  1. Brown the lean ground turkey or chicken in a splash of avocado oil.
  2. Add the chopped onion and cook until the onion is translucent and fragrant.
  3. Stir in the taco seasoning and mix well.
  4. Pour in the diced tomatoes and low sodium chicken broth.
  5. Add the black beans and corn, mixing everything together.
  6. Simmer the soup for 20 minutes, tasting and adjusting seasonings as necessary.
  7. Optionally, stir in chopped spinach before serving.

Notes

This soup keeps well in the fridge and tastes even better the next day. Perfect for freezing too! Feel free to customize it with different proteins or eliminate beans for a low-carb option.
