Main Ingredients
  • 1 lb lean ground turkey Can substitute with ground chicken
  • 1 can low-sodium black or kidney beans Drain and rinse
  • 1 can chopped tomatoes Use low-sodium if preferred
  • 1 medium onion Chopped
  • 1 large bell pepper Chopped
  • 3 cloves garlic Minced
  • 1 tbsp olive oil
  • 1 cup corn Optional
  • 1 cup carrots Optional and chopped
Spices
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • 1 tbsp paprika
  • optional jalapeños Adjust based on spice preference

Method
 

Preparation
  1. Brown the ground turkey in a large pot over medium heat.
  2. Add chopped onions, bell pepper, and minced garlic; sauté until softened, about 5-6 minutes.
Cooking
  1. Stir in canned tomatoes, drained beans, and all spices.
  2. Cover and reduce heat to low, letting it simmer for at least 30 minutes.
Serving
  1. Serve warm, topped with sliced avocado, cilantro, or shredded cheese, if desired.
  2. Enjoy it over brown rice or with crusty whole-grain bread.

Notes

Leftovers can be stored in the refrigerator for up to 4 days. It also freezes well; cool before storing in freezer bags.
