  • 1 lb ground turkey
  • 1 medium onion, chopped
  • 1 medium red bell pepper, chopped
  • 1 medium zucchini, chopped optional
  • 1 can diced tomatoes optional
  • 1 can beans (your choice) optional
Seasoning
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • to taste salt and pepper

Method
 

Cooking
  1. Heat a large skillet over medium-high heat.
  2. Add the ground turkey and break it up with a spoon, cooking until browned.
  3. Stir in the chopped onion, bell pepper, and zucchini (if using). Let cook until the veggies soften.
  4. Add the garlic powder, cumin, smoked paprika, salt, and pepper, mixing well.
  5. If desired, stir in the can of diced tomatoes and beans and cook until heated through.

Notes

This recipe is flexible; feel free to use whatever vegetables you have on hand. You can also experiment with different seasonings to change the flavor profile.
