Ingredients
  

For the Ground Beef Bowl
  • 1 lb Ground beef Lean or extra-lean preferred.
  • 2 cups Mixed vegetables Peppers, broccoli, spinach or any vegetables available.
  • 1 tablespoon Spicy sauce or sriracha mayo To taste.
  • 4 large Eggs Optional.
  • 1 cup Kimchi Optional, for added flavor.
For the Chili
  • 1 can Kidney beans Drained and rinsed.
  • 1 can Diced tomatoes With juices.
  • 1 medium Onion Chopped.
  • 2 tablespoons Chili powder To taste.

Method
 

Preparation
  1. In a large skillet, brown the ground beef over medium heat until fully cooked.
  2. Add mixed vegetables and stir until heated through.
Assembly
  1. Serve the ground beef and vegetable mixture in bowls.
  2. Drizzle with spicy sauce or sriracha mayo.
  3. Top with an egg or kimchi if desired.
Chili Preparation
  1. In a pot, combine ground beef, kidney beans, diced tomatoes, onion, and chili powder.
  2. Simmer on low for 20 minutes, stirring occasionally.

Notes

Great for meal prep! Store in airtight containers in the fridge for up to four days. Can be frozen for longer storage. Serve over cauliflower rice or baked sweet potatoes for enhanced flavor.
