  • 1 Tbsp oil For cooking
  • 1 lb potatoes (about 2 medium), in ½ inch dice
  • 1 lb lean ground beef
  • 1.5 tsp salt
  • 0.5 tsp pepper
  • 1 medium onion, chopped
  • 1 medium bell pepper, chopped
  • 2 cloves garlic, minced
  • 0.5 tsp smoked paprika
  • 1 cup shredded Cheddar cheese For topping
  • 2 green onions chopped For garnish

Method
 

Cooking
  1. Heat the oil in a large non-stick skillet over medium-high heat.
  2. Add the potatoes in a single layer and cook undisturbed until lightly browned underneath, about 2 minutes.
  3. Stir the potatoes and cook undisturbed again for another 2 minutes to brown them more.
  4. Use a wooden spoon to move the potatoes to one side of the skillet.
  5. Add ground beef to the other side of the skillet.
  6. Sprinkle the potatoes and the beef with salt and pepper.
  7. Break up the ground beef with the wooden spoon and spread it over the empty side of the skillet. Press down on the beef with the spoon.
  8. Cook the beef for 4 minutes, undisturbed. Stir the potatoes occasionally.
  9. If there is excess fat from the beef, you can scoop it off if desired.
  10. On top of the potatoes and beef, add onion, bell pepper, garlic, and paprika. Flip and stir everything until mixed.
  11. Cook until the vegetables are soft, beef is no longer pink, and potatoes are fork-tender, about 3-4 minutes.
  12. Turn off the heat and sprinkle cheese on top, allowing the steam to melt the cheese.
  13. Top with chopped green onions and serve.

Notes

Cut the potatoes uniformly to ensure they cook evenly. For a healthier twist, substitute ground turkey or chicken for the beef. Feel free to add in other vegetables like zucchini or corn for added nutrition and flavor. Leftovers can be stored in an airtight container in the fridge for 3-4 days.
