Method
Cooking the Chicken
- Heat a large skillet over medium-high heat and drizzle in olive oil.
- Add the chicken and cook until golden brown, about 5-7 minutes.
- Once the chicken is mostly cooked, push it to the side of the skillet.
Adding Aromatics and Vegetables
- Add the chopped garlic to the skillet and cook until fragrant.
- Mix in the cherry tomatoes and let them burst.
- Add the olives and continue to cook for 3-4 minutes.
Finishing Touches
- Before removing the skillet from heat, add lemon zest and juice.
- Sprinkle feta cheese on top and allow it to melt slightly.
Serving
- Remove the skillet from heat and sprinkle with fresh herbs.
- Serve directly from the pan or on a plate.
Notes
Serve with fluffy jasmine rice, crusty bread, simple green salad, or roasted veggies. You can eat it straight from the pan!
