Greek Chicken with Tomato, Olive, and Feta Topping

Ingredients
  

Main ingredients
  • 4 pieces Chicken thighs or breasts Thighs are juicier.
  • 2 tablespoons Olive oil Extra-virgin recommended.
  • 4 cloves Fresh garlic More is better!
  • 2 cups Cherry tomatoes Canned works in a pinch.
  • 1 cup Kalamata olives Pitted unless you like living dangerously.
  • 1 cup Crumbled feta cheese Don't skimp!
  • 1 each Lemon For zest and juice.
  • 1 teaspoon Fresh or dried oregano
  • to taste Salt
  • to taste Pepper

Method
 

Cooking the Chicken
  1. Heat a large skillet over medium-high heat and drizzle in olive oil.
  2. Add the chicken and cook until golden brown, about 5-7 minutes.
  3. Once the chicken is mostly cooked, push it to the side of the skillet.
Adding Aromatics and Vegetables
  1. Add the chopped garlic to the skillet and cook until fragrant.
  2. Mix in the cherry tomatoes and let them burst.
  3. Add the olives and continue to cook for 3-4 minutes.
Finishing Touches
  1. Before removing the skillet from heat, add lemon zest and juice.
  2. Sprinkle feta cheese on top and allow it to melt slightly.
Serving
  1. Remove the skillet from heat and sprinkle with fresh herbs.
  2. Serve directly from the pan or on a plate.

Notes

Serve with fluffy jasmine rice, crusty bread, simple green salad, or roasted veggies. You can eat it straight from the pan!
