Ingredients

Dry Ingredients
  • 2 cups gluten-free all-purpose flour Bob's Red Mill or King Arthur recommended
  • 2 tablespoons sugar Brown sugar can be used as a substitute
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 pinch salt
Wet Ingredients
  • 1.5 cups milk Dairy or plant milk works
  • 1/4 cup melted butter or oil
  • 2 large eggs
  • 1 teaspoon vanilla extract Optional but recommended

Method

Preparation
  1. Whisk together the flour, sugar, baking powder, baking soda, and salt in a big bowl.
  2. In another bowl, mix your milk, eggs, melted butter, and vanilla.
  3. Pour the wet ingredients into the dry ingredients, stirring until just combined (lumps are fine).
Cooking
  1. Preheat and grease the waffle iron.
  2. Pour in the batter and cook according to your waffle maker's settings until golden brown.
Serving
  1. Serve waffles hot to avoid sogginess.

Notes

For crispy waffles, don't overmix and allow the batter to rest for a few minutes. Preheating the waffle iron is essential for best results. Consider using yogurt in place of some milk for a tangy flavor.
