  • 1 cup gluten-free flour blend Ensure it contains xanthan gum or a sticky ingredient.
  • 1/4 cup granulated sugar For sweetness.

  • 1/3 cup butter or dairy-free alternative Softened for mixing.
For the filling
  • 2 large eggs Essential for the filling texture.
  • 1 cup granulated sugar Sweetens the lemon filling.
  • 2/3 cup fresh lemon juice Freshly squeezed for best flavor.
  • 1 tablespoon lemon zest Enhances lemon flavor.
  • 2 tablespoons gluten-free flour To thicken the filling.
  • powdered sugar for dusting Optional for serving.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the gluten-free flour blend, sugar, salt, and butter. Mix until crumbly and press into a lined baking pan.
  3. Bake the crust for about 15 minutes or until set. Do not overcook.
  4. In another bowl, whisk together the eggs, sugar, lemon juice, lemon zest, and additional gluten-free flour until smooth.
  5. Pour the lemon mixture over the hot crust and return to the oven.
  6. Bake until the filling jiggles slightly in the center, about 20 minutes. Let cool completely.
  7. Dust with powdered sugar before serving, if desired.

Notes

For a nut-free version, use a gluten-free flour blend that does not contain nut flours. You can also substitute butter with dairy-free margarine or coconut oil.
