Ingredients
  

For the Chicken
  • 4 pieces chicken breasts Grilled
  • 1 cup citrus salsa For topping
For the Chili
  • 2 cans mixed beans Drain and rinse
  • 1 cup chopped vegetables Bell peppers, onions, etc.
  • 1 tbsp chili powder Adjust to taste
For the Tacos
  • 2 large sweet potatoes Cook and mash
  • 1 cup avocado Sliced
  • 1/4 cup fresh herbs Cilantro or parsley
For the Quinoa Bowl
  • 1 cup quinoa Cooked
  • 1 can chickpeas Drained and rinsed
  • 2 cups roasted vegetables Mix of your choice

Method
 

Preparation
  1. Prepare the grilled chicken breasts and top with citrus salsa.
  2. For the chili, heat a pot and sauté the chopped vegetables, then add the beans and chili powder, simmer until heated.
  3. Mash the cooked sweet potatoes for the tacos and prepare the toppings.
  4. Cook quinoa according to package instructions and mix with chickpeas and roasted vegetables.

Notes

Experiment with bold flavors and don't be afraid to adjust the spices to suit your taste. Batch cook and freeze leftovers for quick meals.
