- Grab a small pot and pour in the full-fat coconut milk and brown sugar.
- Add a pinch of salt, then whisk the mixture together.
- Set the pot over medium heat, whisking continuously as it comes to a gentle bubble.
- Simmer for 12-15 minutes, continuing to stir until the sauce thickens and becomes glossy.
- Remove from heat and stir in the vanilla extract.
- Let it cool for about fifteen minutes before serving.
Notes
You can store leftovers in a mason jar in the fridge for up to a week. A little graininess is okay and it will melt as it sits. For a salted caramel version, stir in a pinch of flaky salt. Can be frozen in an airtight container for later use.
