Ingredients
  

For the Chicken
  • 4 pieces boneless, skinless chicken breasts or thighs Pat dry and season with salt, pepper, and optional garlic powder or herbs.
For the Gravy
  • 1 tablespoon butter Use in the same pan after browning the chicken.
  • 2 tablespoons flour Stir into melted butter to form a roux.
  • 2 cups chicken broth Add gradually while whisking to avoid lumps.

Preparation
  1. Pat the chicken pieces dry and season with salt, pepper, and any herbs you prefer.
  2. Heat oil in a large skillet over medium heat and brown the chicken for a few minutes on each side.
Making the Gravy
  1. Remove the chicken from the skillet and set aside on a plate.
  2. In the same skillet, add butter and flour to make a roux, stirring until golden.
  3. Slowly whisk in chicken broth, stirring continuously until the gravy thickens.
  4. Return the chicken to the skillet and simmer until cooked through, about 5-10 minutes.
  5. Check that the chicken reaches 165°F for doneness.

Notes

Serve with mashed potatoes, egg noodles, rice, or roasted veggies for a complete meal. Leftovers can be stored in an airtight container in the fridge for three days or frozen with care.
