For the Bell Pepper Pizzas
  • 4 large bell peppers Hollowed out and cut in half
  • 1 cup pizza sauce For filling the peppers
  • 2 cups shredded mozzarella cheese For topping
  • 1/2 cup sliced mushrooms Optional topping
  • 1/2 cup sliced olives Optional topping
  • to taste Italian herbs For flavoring
  • to taste chili flakes For those who like a bit of heat

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Slice the tops off the bell peppers and remove the seeds.
  3. Place the hollowed peppers on a baking tray.
  4. Fill each pepper with pizza sauce and top with shredded mozzarella cheese.
  5. Add optional toppings like mushrooms or olives and sprinkle with Italian herbs and chili flakes.
Cooking
  1. Bake in the preheated oven for about 25 minutes or until the cheese is bubbly and golden.

Notes

These pizzas are great for meal prep and can be fun for kids to assemble their own. They taste wonderful cold too!
