- In a large pot, brown the ground beef over medium heat. Drain excess fat.
- Add the diced onions and minced garlic to the pot. Sauté until onions are translucent.
Cooking
- Stir in the canned tomatoes, kidney beans, chili powder, cumin, oregano, and cayenne pepper.
- Bring to a boil, then reduce heat to low and let it simmer covered for at least 2 hours, stirring occasionally.
- Taste and adjust seasoning as necessary.
Notes
Letting the chili rest overnight improves its flavor. Serve with cornbread or crusty bread for the best experience.
