  • 2 lbs ground beef Use lean ground beef for a healthier option.
  • 1 cup onion, diced Add more for extra flavor.
  • 4 cloves garlic, minced Fresh garlic enhances the taste.
  • 1 can kidney beans, drained and rinsed Feel free to substitute with black beans.
  • 1 can diced tomatoes Use crushed tomatoes for a smoother texture.
  • 2 tablespoons chili powder Homemade chili powder is recommended.
  • 1 tablespoon cumin Adds an earthy flavor.
  • 1 teaspoon oregano
  • 1 teaspoon cayenne pepper Adjust for desired heat level.

Method
 

Preparation
  1. In a large pot, brown the ground beef over medium heat. Drain excess fat.
  2. Add the diced onions and minced garlic to the pot. Sauté until onions are translucent.
Cooking
  1. Stir in the canned tomatoes, kidney beans, chili powder, cumin, oregano, and cayenne pepper.
  2. Bring to a boil, then reduce heat to low and let it simmer covered for at least 2 hours, stirring occasionally.
  3. Taste and adjust seasoning as necessary.

Notes

Letting the chili rest overnight improves its flavor. Serve with cornbread or crusty bread for the best experience.
