  • 4 pieces chicken breasts (medium-sized) Boneless thighs can also be used.
  • 6 slices bacon Thin-cut for crispiness, thick-cut for more flavor.
  • 1 cup mushrooms, sliced Optional; skip if not preferred.
  • 2 cups shredded Colby Jack cheese Can substitute with Monterey Jack, cheddar, or a Mexican blend.
  • 1 tablespoon fresh parsley For garnish, optional.
Honey-Mustard Sauce
  • 1/2 cup mayo Full-fat recommended.
  • 3 tablespoons Dijon mustard Yellow mustard can be used for a milder flavor.
  • 3 tablespoons honey Use real honey for best flavor.

Method
 

Preparation
  1. Preheat your oven to 375°F.
  2. Mix together mayo, Dijon mustard, and honey to create the honey-mustard sauce; set aside a third for serving.
  3. Cook bacon in a skillet until crispy. Remove and set aside.
  4. Season chicken breasts with salt and pepper, then cook in the leftover bacon grease until golden, flipping once.
Cooking
  1. If using, add sliced mushrooms to the skillet and sauté for 1-2 minutes.
  2. Layer the cooked chicken with the honey-mustard sauce, mushrooms, shredded cheese, and bacon.
  3. Bake in the oven for 15 minutes, or until the cheese is bubbly and golden.

Notes

You can substitute ingredients based on preference or availability. Let the chicken rest briefly after baking for juiciness. Excellent with sides like mashed potatoes or steamed broccoli. Leftovers can be stored in an airtight container.
