  • 4 pieces thin cut chicken breasts These can be baked or used in casseroles.
  • 2 cups zucchini, spiralized Use instead of pasta to reduce carbs.
  • 1 cup almond flour Use as a substitute for breadcrumbs.
  • 2 cups shredded cheese, your choice Cheddar or mozzarella works well.
For the Sides
  • 4 cups broccoli florets Can be made into cheesy broccoli bites.
  • 2 cups cauliflower, riced or mashed Great as a potato substitute.
  • 2 cups zucchini, sliced for chips Bake for crispy zucchini chips.
  • 1 bunch radishes When butter-baked, they taste like roasted potatoes.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Prepare the thin cut chicken breasts by seasoning as desired.
  3. Spiralize zucchini and set aside for cooking.
  4. Rice or mash the cauliflower, season to taste.
  5. Cut the radishes in half if they are large and prepare for baking.
Cooking
  1. Bake the chicken breasts in the oven for 25-30 minutes until fully cooked.
  2. While the chicken is baking, steam or sauté the broccoli until tender.
  3. Prepare the cheesy broccoli bites by mixing steamed broccoli with cheese and almond flour, then bake for 15 minutes.
  4. Bake the zucchini chips until crispy, approximately 15-20 minutes.
  5. Butter bake the radishes in a dish alongside the other vegetables for 20 minutes.

Notes

For picky eaters, involve kids in meal selection to ensure they are more accepting of the meals. These recipes can be frozen for later use.
